Gin Bothy Rhubarb Gin Liqueur - 100ml (double shot per person)
Fennel, really finely diced with some grated ginger - 110 g
Freshly Squeezed Lemon Juice - 50 ml
Soda Water
Rhubarb for garnish

Method
Add all the ingredients except the soda to a shaker.
Fill two thirds of the way up with ice and shake hard for 20 seconds.
Strain the mixture into the glasses and top with soda water. Serve with either ice or without in a flute.

Garnish: Peel some rhubarb finely, place in ice cold water to make it curl, then swizzle around a herb sprig.
Optional: Add a drop of grenadine or food colouring to give a deeper red.
